Our cuisine includes traditional dishes of regional Ligurian cuisine prepared according to old popular recipes.
We like to think that we have not re-invented anything, but rather recovered those flavours of our land that we feel are our own. This does not mean that creativity and small culinary licences are a priori opposed, but rather that they must be functional to enhance the authenticity of the dishes.
